Description du poste
The Projects & Operational Deployment Manager supports the development and delivery of hospitality projects across the group’s portfolio (restaurants and hotels), including openings, refurbishments, conversions and operational deployments. The role sits at the intersection of project coordination and operational readiness, ensuring projects are executed smoothly and transitioned effectively into operations through clear stakeholder alignment, disciplined follow-up and practical delivery oversight.
A hands-on role combining operational excellence with project delivery across a growing international hospitality portfolio.

Key Responsibilities
PROJECT DELIVERY
● Coordinate assigned restaurant and hotel F&B projects from kick-off to opening and handover, ensuring clarity on scope, timelines and key deliverables.
● Build and maintain project plans (milestones, dependencies); track progress and owners across workstreams.
● Organise and run effective project follow-ups (internal and external): agenda, decisions captured, action items assigned and tracked.
● Monitor project constraints (timeline, suppliers, approvals) and escalate risks early with mitigation options and clear next steps.
● Support practical budget follow-up (quotes, variations/change requests) in coordination with Finance/Administration, where relevant to the project scope.
OPERATIONAL DEPLOYMENT & READINESS (NON SITE-BASED)
● Translate project deliverables into operational needs (FOH/BOH workflows, operational set-up, equipment/OS&E coordination).
● Coordinate pre-opening readiness with Operations/Training and Culinary teams: opening priorities, readiness checklists and critical path items.
● Support launch planning (soft opening approach, opening week schedule, immediate post-opening priorities).
● Ensure a smooth transition from project phase to operations, including punch lists and early post-opening follow-up / stabilisation.

● Ensure alignment through clear communication and reliable follow-up, including in multi-country / multi-time-zone contexts.
● Maintain a service-minded approach to partner relationships, addressing issues proactively and professionally.
● Support internal stakeholders’ capabilities in project tracking and methods.
REPORTING & EXECUTION DISCIPLINE
● Provide concise weekly status updates to management on assigned projects (progress, key risks, decisions needed, next steps).
● Maintain visibility on key deadlines and dependencies, ensuring leadership is informed in time to arbitrate and remove blockers.
● Contribute to continuous improvement in coordination and delivery through pragmatic tools and clear reporting.
